I’m a decent cook who likes to try new things. I’m also:
- an Orthodox Christian, and so vegan about half the days of the year (we “fast” by avoiding meat, fish, and dairy foods), and
- diabetic, so I need to avoid refined carbohydrates, be careful about quantities of all carbohydrates, and generally eat healthy food.
A few of my recipes get positive reviews from family and friends, so I’m posting them here. I’ll indicate which are diabetic safe, which are vegetarian or vegan, which are kosher-friendly (can be made kosher easily by somebody who knows how to keep a kosher kitchen), and which are halal-friendly (can easily be made halal if you use halal meat). I’ll probably come up with cute little icons to show this eventually, but wanted to post a few recipes first. :-)
